Gracias, Dany. Happy New Year. Looking forward to more of your fantastic essays.

In the nutrition chapter, I talk about cooking as one of the best ways to eat better (without dieting) and stay active as well. I am a trainer but I understand that not everyone wants, likes, or needs to exercise and diet.

I also talk about how other cultures (compared to the US) are more naturally and intuitively healthier and fitter. Such is the case of France from which the concept of the French Paradox emerged. Plus, being a cook myself I lean more on the side of promoting better nutrition through flavor and pleasure than through cutting calories and avoiding ingredients. The body absorbs more nutrients when food is enjoyed, even when it is not 'that' healthy, and when it is not enjoyable, no matter how #healthy the food is, nutrient absorption is limited; but for some reason, in the US, that is not promoted. Here is all about guilt, fear, and shame.

I am really invested in this project and I will (self)publish it to the best of my ability. If you like the idea and would like to support me, share my post, I will really appreciate it. I am trying to make as much noise as possible.
